Your best bet is to contribute to the wiki you're most interested in, contacting the founder to see if he/she is still available to help, and if you're still up for it after a week or two, possibly requesting adminship there if it's completely abandoned. It'll take a while to get interest to get back up, so make sure you advertise outside Wikia (without spamming, which can sometimes be difficult).
