Okay, so on a wiki, we're doing an event, and I hover over the gray option on someone's message, and it gives me the option to edit? I'm only a rollback on that wiki, so why do I have the option to edit other peoples messages...?

I'm a rollback as well on another wiki and I have that same ability. I don't know why, but that's just another ability I have.
I'm not a rollback, only an admin and bureaucrat on one wiki, but I have the same option. I think editing comments is a rollback specific ability (so I guess admins have the rollback option without the status?).
I would guess it is there to remove inapporpriate words. If there is swearing on a wiki that doesn't allow swearing, it can be removed. I've seen links to phishing websites edited out too.
